KETO CREAMY ENCHILADA BOWL
This is my Creamy Enchilada Bowl Keto style. I love it and this recipe makes 1 serving and perfect to meal prep. You can even freeze it and reheat it as well. I used the lazy girl method Chef Mike but you can def use the airfyer or oven! Let me know if you try it! Here’s what you’ll need!

INGREDIENTS:
4oz boiled chicken shredded or chopped
60g red enchilada sauce
60g green enchilada sauce
170g Oikos pro plain Greek yogurt 25g protein
56g fat free shredded cheese rinsed (makes it 0 carbs)
2 la banderita street taco flour tortillas
2 tablespoons Mateo’s cantina salsa
Some cilantro
And seasonings (season with your heart)
INSTRUCTIONS:
Mix yogurt with red and green enchilada sauce and put a small layer in the bottom of your bowl or container. Rips your tortilla and layer on top of the yogurt sauce. Layer some of your cheese and half your chicken and cilantro. Layer more sauce and repeat. Put remaining sauce on top with remaining cheese and heat until cheese is melted. Top with salsa and/jalapeños and enjoy!
