Sourdough
Cheddar + Jalapeño Sourdough 🍞🍞🍞
Ingredients:
* 100g starter
* 350g water
* 500g bread flour
* 10g kosher salt
* 1 cup cheddar (more or less)
* 4 jalapeños (more or less)
Instructions:
* Mix starter and water
* Add in flour and kosher salt
* Shaggy dough
* Cover, rest 1 hr
* 1st stretch + fold
* Cover, rest 30 min
* 2nd stretch + fold
* Cover, rest 30 min
* Last 3rd stretch + fold
* Cover = bulk ferment (double in size)
* Shape dough (add in inclusions during this step)
* Put in banneton (floured)
* Cover, cold proof overnight (or don’t )
Bake:
* Preheat oven and Dutch to 450°F for about 30 minutes
* Place dough in Dutch and bake 35 min with lid
* Lower to 400°F and bake uncovered for 25 min
