Healthy Samoa Cookies Recipe:
Shortbread Layer:
2 cups almond flour
3 tbsp coconut oil (melted)
1/4 cup maple syrup
Coconut Layer:
1 cup unsweetened shredded coconut flakes
1/2 cup pitted dates (soaked for 10-15 minutes in warm water, then blended)
Chocolate Layer:
1 cup dark chocolate chips (at least 70% cocoa)
1 tbsp coconut oil (melted)
Instructions:
Prepare the Shortbread Layer:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large mixing bowl, combine the almond flour, melted coconut oil, and maple syrup. Mix well until the dough is fully incorporated and sticky.
Scoop about 1 tbsp of dough and form into small round discs (about 1-inch diameter). Flatten each disc slightly with your fingers to create a cookie shape. (or roll into 1/8” thick then cut with cookie cutter)
Bake for 10-12 minutes or until the edges are golden brown. Let the cookies cool completely.
Prepare the Coconut Layer:
In a food processor, combine the soaked dates and shredded coconut. Pulse until a sticky, thick mixture forms.
Once the cookies have cooled, spoon the coconut-date mixture on top of each shortbread cookie, pressing it down gently to adhere.
Prepare the Chocolate Layer:
In a small bowl, melt the dark chocolate chips and coconut oil in the microwave in 30-second increments or using a double boiler.
Once melted and smooth, drizzle the chocolate over the coconut layer or dip the bottom of the cookies into the chocolate mixture.
Set the Cookies:
Place the cookies on a baking sheet lined with parchment paper and refrigerate for about 30 minutes to allow the chocolate to set.
