Homemade Pot Pie

I always love pot pie in the winter ❤️🥧

I'm about to share a little secret with you. The first time I tried to whip up this homemade pie crust, I was definitely intimidated But let me tell you, there's nothin' to it! I’ve been making this pie crust for over a year and haven’t bought a store-bought one since! I always make a double portion so I have a top and bottom crust in my pot pie. 

Just mix your flour, salt, and sugar, then add in that cold chopped butter. Pulse it till it's about the size of peas. Add your ice water slowly, just until that dough comes together. (Don't you go over-mixin' now!)

Split that dough in half, foam into a disk or  square, depending on what you are making, this will make it easier to roll ,wrap it up, and let it rest in the fridge. When you're ready, roll it out for your favorite pie recipe. I promise ya, it's gonna taste so much fresher than any store-bought crust. Makes all the difference! it will be ready to use within an hour or if you leave it in the fridge longer I suggest taking it out about 20 minutes before rolling.

And don't forget, if you've got extra, you can freeze it for later. Just thaw it out in the fridge overnight before you use it. Happy baking, y'all! 🥧

Pie Crust - makes 2 pie crusts

2 1⁄2 cups unbleached all-purpose flour

1 cup cold butter, cut into cubes

1 teaspoon salt

2 tablespoons sugar

1⁄2 cup ice water, plus a couple more tablespoons
