Once its boiling turn the heat down and let it simmer for 10 or 20 minutes. strawberry tops need a while to extract the juicewhile regular strawberry quarters will take less time about 8-10minuts.

Then When it's finished simmering strain the strawberry tops from the juice And add the sugar to the pot. You want a 1 to 1 ratio of water and sugar.

Once the sugar has been added, bring the juice to a rolling boil for about a minute or two Then turn it down to a simmer.
