Pumpkin Bars
Ingredients:
For the Pumpkin Bars:
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/4 teaspoon ground cloves
1 cup canned pumpkin puree
1 cup vegetable oil
1 cup granulated sugar
1/2 cup light brown sugar, packed
4 large eggs
1 teaspoon vanilla extract
For the Cream Cheese Frosting:
8 oz cream cheese, softened
1/2 cup unsalted butter, softened
2 cups powdered sugar, sifted
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon (optional)
Directions:
Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan or line it with parchment paper, leaving an overhang on the sides for easy removal.
Mix the Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and cloves. Set aside.
Combine the Wet Ingredients: In a large bowl, whisk together the pumpkin puree, vegetable oil, granulated sugar, brown sugar, eggs, and vanilla extract until smooth and well combined.
Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
Bake the Bars: Pour the batter into the prepared baking pan and spread it evenly. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let the bars cool completely in the pan.
Make the Cream Cheese Frosting: In a large bowl, beat together the softened cream cheese and butter until smooth and creamy. Gradually add the powdered sugar and vanilla extract, beating until well combined. If desired, mix in the ground cinnamon for an extra touch of flavor.
Frost and Serve: Spread the cream cheese frosting evenly over the cooled pumpkin bars. Slice into squares and serve. Store any leftovers in the refrigerator.
