Creamy Tomato Chicken Pasta 🍝❤️
This is one of those recipes I always come back to when I want something comforting but still easy to make. The sauce is rich, creamy, and packed with flavor from the fresh tomatoes and spices. If I made it again, I might add a little parmesan on top for even more creaminess, but honestly it’s delicious as it is!
Ingredients (P-2):
* chicken breast
* pasta
* 2 tbsp oil
* 2 tbsp tomato paste
* 1 onion, chopped
* 1 bell pepper, chopped
* 2 tomatoes, chopped
* 1 tsp minced garlic
* 1 cup heavy cream
* Fresh parsley, chopped
* 1 tbsp butter
* Salt
* Black pepper
* Paprika
* Onion powder
* Garlic powder
* Chili powder
Instructions:
1. Cook the pasta. Meanwhile, heat the oil in a pan and cook the chicken breast seasoned with salt, black pepper, paprika, onion powder, and garlic powder until fully cooked. (P-3)
2. Remove the chicken from the pan. In the same pan, cook the chopped onion and bell pepper until softened. (P-4)
3. Add 1 tsp minced garlic, then the chopped tomatoes. Season with salt, black pepper, paprika, onion powder, garlic powder, and chili powder. Cook until the tomatoes soften and become saucy. (P-5)
4. Add 2 tbsp tomato paste. Pour in the heavy cream and stir in the chopped parsley. Let the sauce simmer for a few minutes. (P-6)
5. Cut the cooked chicken into cubes and add it back to the sauce. (P-7)
6. Drain the cooked pasta and toss it with the butter and a pinch of salt. (P-8)
7. Add the pasta to the sauce and mix well until every piece is coated. (P-9)
