✨ Lazy Girl Spicy Beef Pasta 🍝🔥 ✨
Because sometimes you want to order delivery, but the responsible little voice in your head says: we have food at home!
It was just me for dinner tonight. My big kids with their dad, my fiancé at the hospital till 11, and baby happily enjoying the milk bar. I didn’t want to cook but my stomach wouldn’t take no for an answer. I had one sad uncooked burger patty in the fridge that got left behind when I grilled this week. It was his time to shine! Spicy Beef Pasta was on my mind. The baby was occupied in his chair so I had to move quickly.
👉 Here’s what I threw together:
Ingredients (for 1 hungry girl):
🍔 1 lonely burger patty (4-6oz of ground beef will work too)
🍝 A handful of spaghetti (4 oz-ish)
🧄 1 clove garlic (chopped or jarred if you can’t be bothered)
🍅 2 tbsp sun-dried tomato paste
💧 ½ cup pasta water (added gradually)
🌶 ½ tsp red pepper flakes
✨ Olive oil, salt, pepper
🧀 Freshly grated Parmesan (be generous)
How to throw it together:
1️⃣ Boil your pasta water, salt it like the ocean, and drop in your pasta.
2️⃣ Meanwhile, crisp up that ground beef in a pan with salt + pepper.
3️⃣ Add garlic and cook until fragrant. Stir in the tomato paste and let cook, mixing so it doesn’t burn.
4️⃣ Splash in pasta water (little by little) until it turns saucy. Add chili flakes for heat.
5️⃣ Toss in your spaghetti, add a drizzle of olive oil, toss to coat pasta. Season to taste with S&P.
6️⃣ Top with a small mountain of Parm and eat immediately.
Notes:
✨ Upgrade with spinach, basil, or whatever’s hiding in your fridge.
✨ If you’re like me you don’t know how to measure pasta so you may have unintentionally made two servings. Eat both (I won’t judge), share, or save for later.
✨ Eat your pasta out of the pan if you want to avoid another dish. (again, I’m not judging)
This came together in under 20 minutes, one-handed (thanks baby boy), and honestly… 12/10. The DoorDash app will remain unused for another night
