If you're curious about becoming pescatarian or just looking to expand your seafood recipe repertoire, you're in the right place! Being a pescatarian simply means you incorporate fish and seafood into a vegetarian diet. It’s a fantastic way to enjoy lean protein and healthy fats while still getting plenty of plant-based goodness. For me, it's about making healthier choices that are also delicious and not restrictive. Many find it easier to transition to than a full vegetarian or vegan diet, and the health benefits are numerous, from heart health to improved brain function thanks to those omega-3s! While my Cajun shrimp skewers, creamy Tuscan cod, and lemon herb salmon are staples, a pescatarian diet offers so much variety! When I'm at Aldi, I always look for staples like frozen salmon fillets, tilapia, shrimp, and even canned tuna or sardines for quick meals. Don't forget other amazing options like mussels, clams, and even scallops – you can often find frozen garlic butter scallops that cook up in minutes! Beyond seafood, focus on whole grains like couscous (which pairs perfectly with that creamy Tuscan cod!) or quinoa, plenty of fresh vegetables, legumes, and fruits. It’s all about balance and enjoying what you eat. One of the biggest concerns for anyone starting a new diet is cost and complexity. That's why I love sharing Aldi finds! Their prices on fresh and frozen seafood are often unbeatable. For easy pescatarian meals, think about sheet pan dinners – like the lemon herb salmon and asparagus I mentioned. Just toss everything on a tray and bake! Tilapia fish tacos are another quick weeknight win, and you can prep the toppings ahead of time. Don't underestimate leftovers either; that creamy Tuscan cod or garlic butter scallops can be great for lunch the next day, sometimes even microwavable if you're in a pinch. Meal prepping on a Sunday drastically cuts down on cooking time during the week. Consider making a big batch of a grain like couscous or mashed potatoes to serve with various meals.
