It’s truly my personal favorite, especially when paired with a steaming plate of white rice. Many people haven't had the pleasure of trying it, but once you do, you'll understand why it's such a cherished dish in Nigerian cuisine. What makes this stew so irresistible? It all starts with fresh ingredients and a passionate approach. My recipe focuses on a vibrant base of plum tomatoes and bell peppers, blended smoothly to create that signature rich, red sauce. The OCR mentioned 'Wash plum tomatoes clean' and 'Wash peppers', which is crucial for a clean, fresh taste. We then boil this mixture down until the excess liquid evaporates, concentrating all those amazing flavors. This step, as the OCR highlights, is key to prevent a watery stew – 'Boil until excess liquid drys up'. Achieving that deep, concentrated tomato flavor is the secret to a truly authentic Nigerian tomato stew with fish. For the fish, I usually go for a combination of seasoned catfish and grilled mackerel. The OCR detailed seasoning the catfish with 'Garlic, Ginger, Salt, Onion powder, Seasoning cube' and cooking it briefly for '3-4min'. This pre-seasoning infuses so much flavor into the fish before it even hits the stew. And don't forget the grilled mackerel – 'Salt mackerel and grill' it separately. This helps it hold its shape and adds a lovely smoky depth that complements the rich stew perfectly. It's these details that really elevate a simple 'fish stew' into a memorable 'Nigerian fish stew'. 'Add fish stock and stir', then let it 'Cook for 5-8mins'. Once 'you can separate the oil from The tomatoes sauce', that's your cue that the stew is ready for the fish! Gently adding the pre-cooked catfish and mackerel, and letting it simmer for just '4-5mins', ensures the fish absorbs all those incredible flavors without breaking apart. And there you have it – a 'Delicious' Nigerian fish stew, perfect for any occasion. This isn't just a 'fish soup Nigerian' style; it's a hearty, flavorful dish that truly represents the warmth of African cuisine, deserving of its place among the best Nigerian fish dishes. This Nigerian fish stew is absolutely heavenly with white rice, creating that classic 'Nigerian rice with stew' combination, but don't limit yourself!
