How to Make Budae‑jjigae (Korean Army Stew)

Budae‑jjigae (Korean Army Stew) 🇰🇷🍳🔥

Ingredients:

• 3 cups low‑sodium chicken or beef stock (or water)

• 200g spam, sliced (or substitute with Vienna sausage or hot dogs)

• 1 pack instant ramen noodles (no seasoning)

• ½ block firm tofu, sliced

• ½ cup rice cakes (tteok)

• ½ cup kimchi, chopped

• ½ cup watercress (or spinach)

• ½ cup mushrooms (enoki, shiitake, or any mushrooms you like)

• 1 egg

• Optional add‑ins: sliced onions, baked beans, American, cheddar, or mozzarella cheese slices

Sauce:

• 2 tbsp gochujang (Korean chili paste)

• 1 tbsp gochugaru (Korean chili flakes)

• 1 tbsp soy sauce

• 1 tsp fish sauce (optional)

• 1 tsp sugar

• 1 tsp garlic, minced

Instructions:

1️⃣ In a shallow pan or large pot, add the sauce to the bottom first.

2️⃣ Arrange the spam, tofu, rice cakes, mushrooms, kimchi, watercress, and ramen noodles on top of the sauce.

3️⃣ Pour in the stock, making sure sauce is at the bottom, and bring to a boil over medium‑high heat. Stir sauce into the broth as it heats.

4️⃣ When bubbling, crack an egg on top and simmer until the noodles are cooked and the egg is to your desired doneness (3–4 mins).

5️⃣ Finish with sliced green onions (and a slice of American, cheddar, or mozzarella cheese if desired). Enjoy hot!
