Chicken Pot Pie Soup 🍲🥧

Ingredients:

For the soup:

2 cups cooked chicken, shredded

1/4 cup unsalted butter

1/4 cup all-purpose flour

1 medium onion, diced

2 carrots, diced

2 celery stalks, diced

3 cups chicken broth

1 cup milk

1 cup frozen peas

1 tsp thyme

Salt and pepper to taste

For the topping:

1 sheet puff pastry, thawed

1 egg, beaten

Directions:

Preheat oven to 400°F (200°C). Cut puff pastry into squares, brush with egg wash, and bake for 12-15 minutes until golden.

In a large pot, melt butter over medium heat. Add onion, carrots, and celery, and sauté until tender.

Stir in flour and cook for 1-2 minutes to form a roux. Slowly add chicken broth and milk, stirring constantly until the mixture thickens.

Add shredded chicken, peas, thyme, salt, and pepper. Simmer for 10 minutes.

Serve hot, topped with puff pastry squares.
