🥣 Hearty Chickpea and White Bean Soup 🌱

A warm, nourishing bowl of comfort loaded with protein-rich chickpeas and white beans! Perfect for cozy days and a breeze to make!

Ingredients:

1 tbsp olive oil

1 small onion, diced

2 cloves garlic, minced

1 carrot, diced

1 celery stalk, diced

4 cups vegetable broth

1 can (15 oz) chickpeas, drained and rinsed

1 can (15 oz) white beans, drained and rinsed

1 bay leaf

1/2 tsp dried thyme

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Directions:

Sauté the Vegetables: In a large pot, heat olive oil over medium heat. Add the onion, garlic, carrot, and celery. Sauté until the vegetables are softened, about 5 minutes.

Add Broth and Beans: Pour in the vegetable broth, then add chickpeas, white beans, bay leaf, and thyme. Stir well and bring the soup to a gentle boil.

Simmer: Reduce the heat and let the soup simmer for 20–25 minutes, allowing the flavors to meld together.

Season and Serve: Remove the bay leaf. Season with salt and pepper to taste. Ladle into bowls and garnish with fresh parsley.
