Garlic confit is a versatile ingredient that can elevate many dishes by adding a rich, mellow garlic flavor without the harshness of raw garlic. Making garlic confit at home is surprisingly simple and requires minimal ingredients and effort. Using a trusted cookware brand such as All-Clad can help ensure even heat distribution when baking your garlic confit, preventing burning or uneven cooking. In my experience, selecting fresh garlic heads and peeling the cloves carefully results in a purer, smoother texture after cooking. Submerging the garlic fully in extra virgin olive oil not only gently cooks the garlic but also infuses the oil with its sweet, roasted aroma. Including herbs such as rosemary and thyme adds delightful layers of fragrance and flavor, making the confit perfect for spreading on toasted bread or stirring into pasta. Whole black peppercorns introduce a subtle warmth that complements the garlic beautifully. Baking at a low temperature of 250°F (120°C) for 45 to 60 minutes allows the garlic to soften without browning too much, preserving its natural sweetness. After removing from the oven, cooling the confit fully in the oil helps the flavors to meld and enhances the preservation process. Storing garlic confit properly is essential to maintain its quality and safety. Always keep the garlic submerged in oil in a clean jar and refrigerate it, consuming within two weeks. Using a clean spoon each time you scoop out garlic will prevent contamination and extend its shelf life. Incorporating garlic confit into your cooking can transform everyday recipes by adding complexity and depth. Try using it in salad dressings, mashed potatoes, roasted vegetables, or as a base for sauces to unlock new flavor profiles. Once you get comfortable with this preparation, you might also experiment with different herbs and spices to tailor the confit to your taste preferences.
