INGREDIENTS
Chicken:
1 lb chicken thighs (boneless or bone-in, skin-on)
2 tbsp soy sauce
1 tsp rice vinegar
1-2 tbsp honey
1 tsp grated garlic (or 1/2 tsp garlic powder)
1 tsp grated ginger (or 1/2 tsp ground ginger)
1/2 tsp black pepper
1 tsp smoked paprika
Glaze:
1 1/2 tbsp butter
2-3 cloves garlic, finely minced
2 tbsp honey
2 tbsp soy sauce
1 tsp rice vinegar
1 tsp sesame oil
Leftover marinade
Chili flakes (optional heat)

INSTRUCTIONS
Marinate - Mix chicken with soy sauce, vinegar, honey, garlic, ginger, paprika, and black pepper. Let sit 15–30 min (or overnight for deeper flavor).
First bake - Preheat oven to 375°F (190°C). Place chicken in a baking dish. Bake for 25–30 min, until almost cooked through.
Make the glaze - In a pan, melt butter over medium heat. Add garlic and sauté 30–60 seconds (just until fragrant).
Stir in honey, soy sauce, rice vinegar, and sesame oil. Simmer 1–2 min until slightly thick and glossy.
Glaze - Brush glaze over chicken. Increase oven to 400°F (205°C) and bake 8–12 min.
Optional: broil 2–3 min at the end for sticky caramel edges (watch closely).
Serve - Served with rice, cucumbers, or steamed greens.
