Garlic, known for its sulfur compounds, not only enhances flavor but also helps reduce arterial plaque buildup by lowering cholesterol and blood pressure. Similarly, beets are high in nitrates which convert into nitric oxide in the body—a powerful molecule that relaxes blood vessels and improves blood flow. Spinach and kale, rich in root nitrates and antioxidants like beta carotene and lycopene, support artery flexibility and combat oxidative stress that can damage vessel walls. Cruciferous vegetables such as broccoli and radish provide sulforaphane, which has proven benefits in reducing inflammation and protecting arterial health. In addition, carotenoid-rich carrots and asparagus help strengthen circulation and provide vital nutrients that sustain vascular structure.
