Creating your own starter involves mixing equal parts flour and water, then allowing it to ferment at room temperature for several days until it becomes bubbly and active. It’s best to use unbleached flour for the starter, as it contains wild yeast and beneficial bacteria necessary for fermentation. Once your starter is ready, mixing it with flour, water, and salt will form the basis of your dough. Allow it to rise for several hours or overnight, depending on your recipe and desired flavor profile. Overproofed Sourdough loaf or Perfection?
Everyone has their own goal when baking sourdough bread. Some like their crumb to be very hole-y and open, others prefer a slightly denser loaf, but I find that more and more people like a fluffy, closed crumb. One where the butter and jam won’t seep through the holes yet it’s very soft and fluffy.
