Loaded Potato Night
Ingredients:
Potatoes
• 3–4 large russet potatoes
• Olive oil
• Salt & black pepper
Filling
• 1–1½ cups cooked chicken breast, chopped
• ¾–1 cup shredded Mexican cheese blend
• ½ cup sour cream
• 2 tbsp butter
• ¼ cup milk or cream (as needed)
• ½ tsp garlic powder
• ½ tsp onion powder
• ½ tsp paprika
• Salt & pepper, to taste
Toppings
• 3–5 slices cooked bacon
• Fresh parsley, chopped
• Extra Mexican cheese blend
👩🏽🍳 Instructions
1. Bake potatoes:
Heat oven to 400°F (205°C). Rub potatoes with olive oil and salt. Bake 45–60 minutes until tender.
2. Blend bacon:
Cook bacon until crispy. Add to food processor and pulse until finely crumbled. Set aside.
3. Mash filling:
Slice potatoes in half, scoop out insides. Mash with butter, sour cream, milk, garlic powder, onion powder, paprika, salt & pepper.
4. Add chicken & cheese:
Fold in chicken and Mexican cheese.
5. Stuff potatoes:
Fill the potato skins and place on a baking sheet.
6. Bake again:
Top with more cheese and bake 10–15 minutes until melted and bubbly.
7. Finish:
Sprinkle blended bacon, parsley, and a touch of paprika. Broil 2–3 minutes for golden tops.
😋 Tip
Add jalapeños or a drizzle of chipotle sauce if you like heat 🌶️
