I usually marinate my chicken breast for at least 30 minutes in a simple mix of olive oil, lemon juice, salt, pepper, and a pinch of paprika before grilling it until it's perfectly cooked and tender. Once it's done, I slice or shred it into bite-sized pieces. This tender, flavorful chicken is what makes the wrap truly stand out. Next up, the fresh veggies! I love the crisp bite of romaine lettuce and the juicy sweetness of fresh tomatoes. For that extra zing, thinly sliced red onion and homemade pickled cucumbers are a must. If you don't have pickled cucumbers on hand, a quick way to make them is to slice regular cucumbers and let them sit in a mix of vinegar, water, salt, and a tiny bit of sugar for about 15-20 minutes. They add such a fantastic tang that cuts through the richness of the other ingredients. Now, let's talk about the sauce – it's a game-changer! My secret is a creamy homemade garlic mayonnaise.
