This wrap is loaded with hummus, spinach, feta, olives, and juicy filet mignon, then pressed until golden and crispy.

Mediterranean Steak, Feta & Hummus Lavash Panini Wrap

Ingredients

1 lavash wrap

4–6 oz cooked filet mignon steak, thinly sliced

2–3 tbsp hummus

1 handful fresh spinach

2 tbsp crumbled feta cheese

6–8 olives, sliced (Kalamata works best)

Optional: sliced cucumber, red onion, roasted red peppers

•Drizzle of olive oil

•Pinch of black pepper

Instructions

1. Warm the steak

•Gently reheat the sliced filet mignon in a skillet over low heat until just warmed through.

2. Assemble the wrap

•Lay the lavash flat.

•Spread the hummus evenly over the center.

•Layer on the spinach.

•Add the warm steak slices.

•Sprinkle with feta cheese and sliced olives.

•Add any optional veggies if using.

•Finish with a little black pepper and a light drizzle of olive oil.

3. Roll

•Fold in the sides and roll tightly into a wrap.

4. Panini Press

•Lightly brush the outside with olive oil.

•Cook in a panini press for 3–5 minutes until golden and crisp.

•If using a skillet, press with another heavy pan and cook 2–3 minutes per side.
