🍰 Japanese Style Cake Roll Spunge (Original Recipe)

Ingredients

• 5 chicken eggs

• 90g egg yolk + 10g sugar

• 175g egg white + 60g sugar + 2g lemon juice

• 40 grams melted butter

• Cake flour (soft flour) 45 grams

How to do

1. Prepare

• Glide the cake dough 2 times, set aside

• Melt butter by placing it on a hot tub (temperature about 70 ℃)

2. Hit the egg yolk

• Egg yolk + 10g sugar, whisk until thickened, fluffy and lighter in color

• If using a cold egg yolk from the refrigerator, it will be easier to beat it on a hot tub.

3. Whisk egg white (meringue)

• Add 60 grams of sugar + lemon juice to egg whites

• Beat until set hard, silky, silky top

4. Mixed ingredients

• Pour the egg yolk into the meringue. Use a soft man's hand muzzle (do not need to be completely smooth).

• Glide the prepared dough down. Gently stir a little more (do not need to be completely smooth).

5. Add melted butter

• Pour melted butter at about 70 ℃.

6. Baking
