Luscious Lemon Heaven Cookies 🍋🍪

Ingredients:

1 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

2 1/2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

1 cup lemon curd (store-bought or homemade)

1 cup white chocolate chips

2 tablespoons heavy cream

Directions:

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla.

In another bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, mixing until just combined.

Scoop tablespoon-sized balls of dough onto the prepared baking sheet, flattening each slightly. Make a small indentation in the center of each cookie with your thumb.

Fill each indentation with a small amount of lemon curd. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.

While the cookies are baking, melt the white chocolate chips and heavy cream together in a microwave-safe bowl, stirring every 30 seconds until smooth.

Allow the cookies to cool completely, then pour the melted white chocolate over the top of each cookie and drizzle with additional lemon curd.
