Ingredients:

- 4 (8oz) packages of cream cheese, softened at room temperature

- 1 cup of granulated sugar

- 4 eggs

- 1 tsp vanilla extract

- 1 tsp almond extract

- 2 packages of Ready to Bake Sugar Cookies (24 cookies/pack)

- Christmas colored sprinkles

Instructions:

1. Preheat the oven to 325°F (165°C).

2. Lightly spray a 9"" springform pan with cooking spray and set aside.

3. Line the outer edge of the pan with one package of sugar cookies, and continue inward with the second package. Ensure cookies touch each other completely.

4. Bake the cookies for about 8 minutes or until spread out. Let cool for 5 minutes.

5. For the cheesecake, beat the softened cream cheese until creamy. Add sugar, vanilla, and almond extract; mix until combined.

6. Add eggs one at a time, mixing slightly between each addition, scraping the bowl's edges to incorporate fully, but do not over-mix.

7. Pour the cheesecake batter over the baked sugar cookie crust.

8. Place a roasting pan with 2 inches of water on the oven's bottom rack. Position cheesecake on the middle rack.

9. Bake for about 55 minutes, until the edges are set and the center has a slight jiggle.

10. Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour.

11. Refrigerate for at least 4 hours or overnight before removing it from the springform pan.
