Cajun Beefy Quesadillas
Ingredients：
1 lb ground beef (or chicken)
1 tsp olive oil
1 small onion, diced
1 small bell pepper, diced
2 cloves garlic, minced
1 tbsp Cajun seasoning
1 tsp smoked paprika
½ tsp black pepper
1 cup diced tomatoes (or Rotel works also)
2 cups shredded mozzarella or pepper jack cheese
4 large flour tortillas
2 tbsp butter (for cooking)
Fresh parsley for garnish (optional)
Directions:
Heat olive oil in a skillet over medium heat. Add ground beef, onion, and bell pepper. Cook until beef is browned and veggies are soft.
Stir in garlic, Cajun seasoning, smoked paprika, black pepper, and diced tomatoes. Simmer for 2-3 minutes, then remove from heat.
Place a tortilla on a flat surface.
Sprinkle cheese on one half, then add a layer of the Cajun meat mixture. Top with more cheese and fold the tortilla in half.
Heat a skillet over medium heat and melt a little butter. Cook the quesadilla for 2-3 minutes per side until golden brown and crispy.
