Breakfast Strombolis
Leftover pizza dough turned into a breakfast win.
Filled with eggs, bacon, Italian sausage, extra pizza toppings, and paired with a homemade cheese sauce. Nothing goes to waste in my kitchen—repurpose what you have and make something new.
Directions
Bring pizza dough to room temp and let rise 1–2 hrs until doubled.
Cook bacon (425°F, rotate every 5 min until crispy) and brown Italian sausage. Chop bacon once cooled.
Make cheese sauce (or country gravy).
Scramble 4–6 eggs, season with salt & pepper.
Roll dough into a rectangle on a floured surface.
Spread cheese sauce slightly off-center.
Layer: sausage → eggs → bacon → mozzarella.
Fold and roll into a stromboli, sealing with egg wash.
Brush top with egg wash, cut slits, add herb crust (optional).
Bake at 400°F:
15 min in parchment-lined pan
25–30 min on rack until golden
Rest 5 min, slice, and enjoy.
