It’s not just about minimizing food waste; it’s about creating something incredibly tasty with minimal effort. If you have some leftover cooked ham, this recipe is a game-changer for your breakfast routine! I always start by getting my ingredients ready. First, I 'cut up' any remaining ham into small, bite-sized pieces. Then, I 'dice up my tomatoes' – I usually go for a medium-sized one, but two cherry tomatoes work just as well for a burst of freshness. The beauty of this dish is its simplicity. I personally like to sauté the ham and tomatoes a little first to bring out their flavors. Just a quick swirl in a non-stick pan with a tiny bit of oil until the ham is slightly crispy and the tomatoes start to soften. Once that's done, it’s time to 'add your eggs'. For a single serving, I usually use two large eggs, whisked lightly with a splash of milk or water – this makes them extra fluffy! Pour the whisked eggs directly into the pan with the simmering ham and tomatoes. Resist the urge to stir constantly. Let the edges set slightly, then gently push the cooked portions towards the center, allowing the uncooked egg to flow underneath. Continue this until the eggs are mostly set but still look a little moist. Overcooked scrambled eggs are a no-go for me! To elevate this simple Ham, Tomato & Egg Scramble, I often add a few extra touches. Sometimes, I throw in some chopped spinach or bell peppers with the tomatoes for an extra veggie boost. And for a kick, 'Siracha on top' is a must for me! The sweet heat perfectly complements the savory ham and eggs. This 'using leftovers for my breakfast' approach isn't just convenient; it's a smart way to get a protein-packed meal to start your day. It’s quick enough for weekdays, yet comforting enough for a lazy weekend. Serve it with a slice of whole-wheat toast, some fresh avocado, or simply enjoy it on its own.
