- 8 chicken pieces (4 drumsticks, 4 thighs)
- 2 tablespoons unsalted butter, melted
- Salt to taste.
- Parsley, chopped finely
Seasoning mix:
- 1 1/2 teaspoon garlic powder
- 1 1/2 teaspoon onion powder
- 1 teaspoon paprika
- 1/2 teaspoon red chili powder
- 1 1/2 teaspoon lemon pepper
- 1/4 teaspoon cumin powder
- 1 1/2 tablespoon light brown sugar
- 1 teaspoon dried rosemary or thyme
- 1/4 teaspoon black pepper
Directions:
1. Clean chicken and pat dry. The drier the better. Cut a few slits in each piece.
2. Place the chicken pieces in a baking dish. Add butter, salt, and the seasoning mix.
3. Massage each piece very well, make sure to get the seasoning into the slits also.
4. Bake in a preheated 400°F oven for 42 to 45 minutes, uncovered and basing in between.
5. Broil for another 2 to 5 more minutes or until the skin is golden brown and crispy. Garnish with chopped parsley.
