Sharing 5 of my all time favorite pasta recipes! These are all delicious, family tested weekly staples that are easy to make. By now means is this authentic, carbonara is traditionally made with Guanciale, however my family loves it with bacon as well!
Ep # 5: Bacon Carbonara 🥓🍝
- 1/2 box of long pasta (fettuccine, spaghetti, angel hair)
- Bacon (as much as your heart desires), cubed
- Pasta water
- Lots of black pepper
- Salt to taste (optional, I omitted it)
Sauce:
- 1 egg
- 2 egg yolks
- 1/2 cup parmesan cheese
- 1/4 teaspoon chili flakes
- 1/4 cup pasta water
Directions:
1. Start by cooking the pasta in salted boiling water.
2. To make the sauce, combine the egg, yolks, Parmesan cheese, and chili flakes. Temper the eggs by adding pasta water little by little and whisk, this ensures the egg to not scramble.
3. Cook the bacon. Set aside to cool and crisp up. Turn the heat off and keep about 1 tablespoon of the bacon fat in the pan.
4. Add cooked pasta into the pan along with sauce and bacon. Combine very well, use enough pasta water to get the desired consistency.
5. Finish with lots of black pepper. Season with salt to taste if desired.
6. Serve immediately with more parmesan and crispy bacon on top. Enjoy!
