French Onion Chicken Thighs

This dish screams cozy fall weather but at no cost to your waist! This French onion chicken with roasted green beans and roasted potatoes leaves you feeling satisfied while still hitting your health and fitness goals! Macros and calories are attached at the end of the video!

You will need:

2 chicken thighs (I made 4 for leftovers for tomorrow)

12 baby potatoes

3 Carrots sliced

1 onion sliced

1 package of the French onion lipton soup mix

1 tbs of olive oil or avocado oil

a dash of water and red wine vinegar to deglaze your pan

garlic powder

2 Tbs minced garlic

1 tsp of thyme

Fresh green beans

Salt (as needed)

For the potatoes:

cube them up and mix them in a ziplock bag with about 1/2 pkg of The lipton French onion soup mix and 1 Tbs of olive oil. Bake at 450 for 35 minutes.

For the green beans:

Steam them in the microwave with a damp paper towel for 10 minutes then salt them, spray a little bit of oil on them, and bake at 400 for 10 minutes. (They will probably be fine baking at 450 for about 8 minutes).

For the chicken:

Sauté your sliced onions and carrots until softened, then add a splash of red wine vinegar to your pan to deglaze it. Add your chicken thighs seasoned with the rest of the lipton soup mix, a splash of water, minced garlic, thyme, garlic powder, and let cook for about 8 minutes and then flip them over. Then cook for an additional 5 to 8 minutes depending on how large your chicken is.

This meal is easy, healthy, and it does not lack in flavor!
