What about the pit and the leftover bits? Don't waste them! There's still delicious fruit around the pit. I usually trim off the remaining flesh from around the pit and peel it. You can then eat these bits directly (my favorite chef's treat!) or chop them up to add to smoothies or sauces. Handling Different Ripeness Levels: Ripe Mangoes: These are a dream to cut! The flesh is soft and yields easily. They're perfect for cubes and will pop out beautifully. The skin might be a bit softer too, so be gentle when pushing it up for cubes. Half-Ripe Mangoes: Sometimes you get a mango that's not quite fully ripe, or maybe you prefer a slightly firmer texture. These are still great! They’ll hold their shape a bit better, making them excellent for slices or adding to savory dishes where you want the mango to maintain some bite. The cutting technique remains the same, but you might need a slightly firmer hand. The Ultimate Storage Hack: Keeping Your Cut Mango Fresh in a Container! This is where the magic happens for meal prep or just having fresh mango ready to go. Once you've cut your mango into cubes or slices, transfer them into an airtight container. I always make sure the container is completely dry inside before adding the mango. Place the lid on tightly and pop it into the refrigerator. Done! Cut mango can typically last for about 3-5 days in the fridge when stored properly. An airtight container is key to preventing it from drying out and absorbing other fridge odors. For longer storage, you can even freeze mango cubes! Just spread them in a single layer on a baking sheet, freeze until solid, then transfer to a freezer-safe bag or container.
