Honey Soy Salmon Bowls are one of my favorite weeknight dinners because they come together fast and you can truly make them your own. This is the kind of recipe that works whether you serve it over rice, toss it on top of a salad, or pair it with whatever veggies you already have in the fridge. Simple, flexible, and packed with flavor is always the goal around here.
The salmon marinates in a quick honey soy sauce that takes just minutes to whisk together. If you have time to marinate ahead, amazing. If not, it still turns out delicious when you prep it right before cooking. I love cutting the salmon into thicker strips, but cubes or leaving it whole works just as well.
Everything bakes together on one sheet pan with frozen edamame, straight from the freezer, which makes this an easy and nourishing dinner option for busy nights. I love pairing this with a simple crunchy side salad using cucumbers and carrots, but truly use whatever veggies you have on hand.
