There's nothing more East Coast summer than a table covered in newspaper, Old Bay, and a pile of steamed crabs. I'm partnering with @Incredible Egg and @mid_atlantic_egg_council, who represent egg producers in Delaware, Maryland and New Jersey. Living right here on the coast, I turned that whole vibe into one bite: East Coast crabby deviled eggs.

They've got all of the crab feast flavors we love, and they're the perfect way to use up leftover crab, or freshly picked crab from the store. Eggs really are one ingredient, endless possibilities. They're already in your fridge and they turn into something this nutritious and good with barely any effort.

Save this one for your next cookout, crab boil, or just a random Tuesday when you want something a little fancy.

East Coast Crabby Deviled Eggs

Ingredients

12 hard boiled eggs, peeled and cut in half

1/2 heaping cup mayo

1.5 Tbsp yellow mustard

2.5 tsp white vinegar

1/8 tsp ground nutmeg

1/4 tsp sugar

1 heaping cup blue crab meat, divided into 1/2 cups

1.5 tsp crab seasoning, such as Old Bay, plus extra for topping

Sliced green onion, for topping

Directions:

1. Boil a pot of water and carefully add the eggs. Boil for 10 minutes, then immediately remove and drop into a very cold ice bath (I like to actually drop them in, the shell hitting the ice and other eggs helps create an initial crack that makes peeling easier). Let the eggs chill in the ice bath for at least 15 minutes. To ensure food safety, always cook eggs to 160°F.

2. To crack the eggs, tap the top and bottom on the table a few times, then lay the egg on its side and gently press and roll to loosen the shell before peeling.

3. Peel the eggs and cut in half. (Tip: wiping your knife with a wet paper towel after each egg keeps the whites clean of yolk) Place the egg whites on a serving dish.

4. Remove the yolks and place in a mixing bowl. Mash well with a fork. Add the mayo, mustard, vinegar, nutmeg, sugar, 1/2 cup of the crab meat, and 1.5 Tsp of crab seasoning. Mix and mash until smooth.

5. Transfer the yolk mixture to a gallon sized bag, scraping the bowl clean. Push the filling into one corner, remove the air, and seal. Snip off the corner to create a piping bag.

6. Pipe the mixture evenly into the egg whites.

7. Top with a generous sprinkle of crab seasoning and sliced green onion.
