Actually, I found this chicken rice recipe from the "Mee Fan Pen Food Blogger" page and saw a lot of people sharing it, so I shared it and saved it in case I want to try it someday. And that day finally came. 😄 But I might not have followed the recipe exactly because I cut and added some ingredients based on what I had in the kitchen. As for the soup, I personally like to boil winter melon with pickled lemon. So I'm sharing the recipe for #boiledwinterwithpickledlemon too!

Ingredients for making soup

-Chicken thighs or breasts/legs can also be used.

-1 chicken carcass

- 500 grams of mature pumpkin

- 2 roots of coriander

-Shiitake mushrooms as desired

-2 pickled limes + pickled lime juice

-Soy sauce (as desired)

-Salt (as desired)

-Pepper (as desired)

Ingredients for making rice

-Chicken fat

- 500 grams of jasmine rice

- 500 grams of broth

-Sliced ginger

-garlic

Ingredients for dipping sauce

-Ginger (as desired)

- Garlic (as desired)

-Red chili peppers (as desired)

-1 part sugar

- 1 part soybean paste

-1 part vinegar

-1 part light soy sauce

-1/2 part sweet dark soy sauce (if you don't have it, you can use dark soy sauce instead, but you may need to reduce the amount used for your baby and add more sugar)

method

- Place a pot on the stove, pour water, bring to a boil, add crushed garlic, add a pinch of salt, then add the prepared chicken frame. At this point, set the heat to medium, add the chicken thighs/chicken breasts/chicken legs, then we will close the lid and turn the heat to low, continue to boil for about 50 minutes.

While waiting, we will continue preparing the rice.

- Stir-fry the chicken fat to extract the oil (we use chicken skin pulled from the chicken carcass). Do not use high heat because it might burn before you get the oil. When you have enough oil, add the sliced ginger and crushed garlic and continue to stir-fry.

- Then add the washed rice and stir-fry for a while.

-Put the stir-fried ingredients in the rice cooker, then pour in the chicken stock and stir gently to coat the rice.

- Press to cook rice as usual.

While waiting for the rice to cook, let's make the soup.

- Take the chicken that has been boiled for 50 minutes and shock it in cold water.

- Leave the broth and chicken bones in the pot. Heat over high heat. Then add the coriander root, mushrooms, winter melon, soy sauce, salt, and pepper. Boil for about 30 minutes.

- After 30 minutes, add the pickled limes + pickled lime juice and boil for another 5-10 minutes. Turn off the heat.

For the dipping sauce, we'll chop the ginger and garlic into small pieces, chop the chili peppers and set aside. Then, mix the other ingredients together and stir until the sugar dissolves. Add the prepared ginger, garlic, and chili peppers and it's done.
