For the sides, the roasted red potatoes were cut into small chunks and tossed with olive oil, rosemary, and thyme before roasting at a high temperature to get that crispy exterior and fluffy interior. The asparagus and peas were lightly steamed and then finished in a pan with garlic butter along with thinly sliced roasted onions. This combination added a subtle sweetness and richness that perfectly complemented the porkchops. What I loved most about this meal was how easy it was to prepare yet felt sophisticated and indulgent.
