Seared Lamb Chops with Mashed Potatoes and Sautéed Green Beans

Ingredients

For the Lamb Chops:

6 lamb chops

2 tbsp olive oil

Salt and pepper, to taste

2 tbsp butter

2 cloves garlic, minced

1 sprig rosemary or thyme

1/4 cup balsamic vinegar

2 tbsp honey or brown sugar

1/4 cup beef or chicken broth

For the Mashed Potatoes:

4 large Russet potatoes, peeled and cubed

1/4 cup butter

1/2 cup heavy cream or milk

Salt and pepper, to taste

Optional: Fresh parsley, for garnish

For the Sautéed Green Beans:

12 oz green beans, trimmed

1 tbsp olive oil

2 cloves garlic, minced

1/4 cup diced onion

Salt and pepper, to taste

Optional: 1/4 cup chopped almonds or toasted breadcrumbs

Instructions

1. Prepare the Mashed Potatoes:

Boil potatoes in salted water until fork-tender, about 15–20 minutes.

Drain and mash the potatoes with butter, heavy cream, salt, and pepper.

Keep warm while preparing the lamb and green beans.

2. Cook the Lamb Chops:

Season lamb chops with salt and pepper.

Heat olive oil in a skillet over medium-high heat. Sear lamb chops for 2–3 minutes per side until golden brown.

Lower the heat and add butter, garlic, and rosemary or thyme. Spoon the melted butter over the chops as they cook for another minute.

Remove the lamb chops and set aside.

Deglaze the pan with balsamic vinegar, honey, and broth. Simmer for 2–3 minutes until the sauce thickens slightly. Return the lamb chops to the pan and coat them with the glaze.

3. Sauté the Green Beans:

Heat olive oil in a skillet over medium heat. Sauté the garlic and onion until fragrant.

Add green beans and season with salt and pepper. Cook for 5–7 minutes until tender-crisp.

Optional: Sprinkle with almonds or breadcrumbs for added texture.

4. Plate and Serve:

Arrange the lamb chops, mashed potatoes, and green beans on a plate.

Drizzle the lamb chops with extra glaze and garnish the mashed potatoes with parsley, if desired.
