Golden, crispy rolls overflowing with a creamy, cheesy crawfish filling—a true taste of Louisiana comfort!

Ingredients:

- **For the Filling:**

- ¼ cup unsalted butter (for sautéing)

- 1 cup sweet onions, finely chopped

- ½ cup green bell pepper, diced

- ¼ cup green onions, sliced

- 3 cloves garlic, minced

- 1 cup evaporated milk

- 8 oz processed cheese, cubed

- ½ tsp butter (for crawfish tails)

- 2 (16 oz) packages cooked crawfish tails

- 1 tsp Cajun seasoning

- ½ tsp salt

- ½ tsp black pepper

- ½ tsp garlic powder

- **For the Rolls:**

- 2 cups vegetable oil (for frying)

- 20 brown-and-serve pistolette or French rolls

Instructions:

**1. Make the Cheesy Sauce:**

- Melt ¼ cup butter in a medium saucepan over medium heat.

- Add onions, bell pepper, green onions, and garlic. Sauté for 5 minutes until softened.
