I saw him make these a while back and then started seeing them everywhere. I do not usually chase viral cooking videos because most of that stuff does not appeal to me or my family. I am cooking for them first, always.

That said, this one was actually solid.

Flour tortillas and meat, sliced and skewered. Brushed with Cajun honey butter for that sweet heat, then finished hot and fast so the edges get crunchy while the inside stays juicy. Simple ingredients, big flavor, and perfect for game day, backyard BBQs, or an easy appetizer on the grill or smoker.

Sometimes viral food is just viral. Sometimes it earns the hype. This one earned a spot on the table.

Ingredients:

First, let's talk about the beef mixture. I typically use a pound of lean ground beef. For the aromatics, I finely dice about half a small red onion, mince two cloves of garlic, and add a generous sprinkle of fresh parsley – roughly 2 tablespoons. The key for me is really incorporating the Cajun Honey rub into the meat. I’ll add about 1-2 tablespoons directly to the ground beef mixture, along with a pinch of salt and black pepper. Gently combine everything until just mixed; overmixing can make the beef tough. Now for the tortilla part, which is genius! I use medium-sized flour tortillas. To assemble, I spread a thin, even layer of the seasoned ground beef mixture over one side of a tortilla, leaving a small edge. Then, I carefully roll it up tightly, like a pinwheel. Once rolled, I slice the tortilla into 1-inch thick rounds. These rounds are then carefully threaded onto skewers.
