Grilled Lamb Chops with Garlic Shrimp & Saffron Rice

Ingredients 🛒

✅ For the Lamb Chops:

4 lamb chops 🥩

2 tbsp olive oil

2 cloves garlic, minced 🧄

1 tsp fresh rosemary, chopped 🌿

1 tsp fresh thyme

1 tsp salt 🧂

1/2 tsp black pepper

1/2 tsp smoked paprika

1 tbsp lemon juice 🍋

✅ For the Garlic Shrimp:

250g large shrimp, peeled & deveined 🍤

1 tbsp olive oil

2 cloves garlic, minced

1/2 tsp red pepper flakes 🌶️ (optional)

1/2 tsp smoked paprika

Salt & black pepper to taste

1 tbsp lemon juice

2 tbsp chopped parsley

✅ For the Saffron Rice:

1 cup basmati rice 🍚

2 cups chicken broth

1/2 tsp saffron threads (soaked in 2 tbsp warm water)

1 tbsp butter 🧈

1/2 tsp turmeric

1/2 tsp cumin

1/2 tsp salt

Instructions 👨‍🍳

1️⃣ Marinate the Lamb Chops:

In a bowl, mix olive oil, minced garlic, rosemary, thyme, salt, black pepper, paprika, and lemon juice.

Rub the mixture over the lamb chops and let them marinate for 30 minutes.

2️⃣ Cook the Saffron Rice:

In a pot, melt butter over medium heat. Add rice, turmeric, and cumin, and sauté for 2 minutes.

Pour in chicken broth and saffron water, then bring to a boil.

Cover and simmer for 15 minutes until rice is tender.

3️⃣ Grill the Lamb Chops:

Heat a grill pan over medium-high heat.

Cook lamb chops for 3-4 minutes per side (or until desired doneness).

Let them rest for 5 minutes.

4️⃣ Sauté the Garlic Shrimp:

In a pan, heat olive oil and sauté garlic for 30 seconds.

Add shrimp, paprika, red pepper flakes, salt, and black pepper.

Cook for 3-4 minutes until shrimp turns pink.

Squeeze in lemon juice and toss with fresh parsley.
