•1/4 cup sour orange juice

•Double cleanse under cold water, then pre-boil briefly in hot water (just enough to tighten the skin slightly — do not fully cook).

🌿 Marinade Ingredients

•2 tbsp Haitian Epis - mix herbs & spices

•1 tbsp Creole seasoning

•1 tbsp Jamaican seasoning (like all-purpose or jerk-style)

•1 tsp onion powder

•1 tsp garlic powder

•1 tsp paprika

•1/2 tsp cayenne pepper

•1 tsp Cajun seasoning

•Salt & black pepper to taste

Instructions:

•Pat wings dry and toss in seasoning mix.

•Let marinate for at least 1 hour (overnight is best for deeper flavor).

🔥 Cooking Steps

Lightly fry wings in a pan with oil just until golden and tender — do not overcook. This step reduces baking time and locks in flavor.

First Bake:

•Preheat oven to 375°F

Toss wings in your favorite buffalo wing sauce (first coat).

•Bake for 5–10 minutes.

•Final Bake:

Remove, toss with second layer of sauce, and bake another •5–10 minutes until sticky, sizzling, and slightly crispy on edges.
