🍳 Crunchy Bibimbap (Serves 2)
Material
Aibiki meat... 200g
1 / 2 carrot (shredded)
Bean sprouts... 1 bag
Spinach... 1 / 2 bunch
Kimchi... 100g
2-3 eggs
Rice... 2 cups
Sesame oil... 1 tablespoon
Combined sauce
2 spoon of red pepper paste
1 spoon of soy sauce
Sugar... 1 teaspoon
Mirin... 1 tsp
Garlic tube... 1 tsp
Sesame oil... 1 tsp
Finish
Cheese, white sesame, Korean paste, (optional)
How to make
① Heat the sesame oil and fry the minced meat. When the color changes, add half the sauce, entangle, and take out.
② In the same frying pan, fry carrots → bean sprouts → spinach → kimchi in order and lightly salt. Take out.
③ Add a little sesame oil, spread the rice flat and press it, and make Okoge over medium heat.

私が「白米のおこげ」をフライパンで安定して作れるようになったコツをまとめます。ビビンバ以外にも応用できるので、忙しい日の“ワンパンごはん”が一気に楽になります。 1) おこげの成功は「米の状態」で8割 炊きたての白米は水分が多くてベチャつきやすいので、私は“少し冷ましたごはん”か“冷蔵ごはんを温め直したもの”を使うことが多いです。粒が締まっていると、押しつけたときに表面が均一に乾いてカリッとしやすいです。 2) フライパンと油のポイント（くっつき対策） 焦げつきやすい人は、できればフッ素加工のフライパンが安心。鉄やステンレスの場合は、しっかり予熱してから油を入れてください。油はごま油が香りも出ておすすめですが、量が少なすぎると米が張り付くので「フライパンの底が薄く光るくらい」は入れています。 3) 火加減は“中火でじっくり”が正解 強火にすると表面だけ焦げて中が柔らかいままになりがち。中火で、音が「ジュワ…」から「パチパチ」に変わってくるまで触らないのが私の目安です。途中で混ぜたくなるけど我慢すると、きれいなおこげが一枚で取れます。 4) 押しつけ方で食感が変わる ごはんを入れたら平らに広げて、フライ返しでギュッと押しつけます。厚みは1.5〜2cmくらいだと、表面はカリッ、中はふんわりのバランスになりやすいです。薄すぎると硬くなりやすいので注意。 5) 仕上げの見極め（ひっくり返さない） おこげは基本ひっくり返さなくてOK。フライパンを軽くゆすって、全体が“スッ”と動くようになったら剥がれやすい合図です。動かないときは、まだ早いので1〜2分追加。 6) 失敗したときのリカバリー もし一部がくっついたら、無理に剥がさず火を止めて少量の水（大さじ1〜2）をフチから入れて、フタをして30秒ほど蒸らすと剥がれやすくなります。ビビンバなら具と混ぜるので、多少崩れても全然おいしいです。 この「白米 おこげ フライパン」の手順を押さえるだけで、ワンパンでも“手抜きじゃなくて技術”っぽい一皿になります。忙しい日ほど、おこげの香ばしさがごほうびなのでぜひ試してみてください。
