Double chocolate Biscotti

One of my favorites that’s a must have during the holidays.

Double chocolate Biscotti.

* 2 cups all-purpose flour

* ½ cup unsweetened cocoa powder (dark can be used)

* 1 teaspoon baking soda

* 1 teaspoon kosher salt (regular salt can be used but I think it’s best with kosher)

* 6 tablespoons salted butter, softened

* 1 cup granulated sugar

* 2 large eggs

* 2 teaspoons vanilla extract

* 1 cup semisweet chocolate chips (or almond bark if you want more of a chunky texture or on a budget)

* 1 tablespoon confectioners’ sugar

(For dusting on the top before baking)

1. Preheat oven to 350-degrees F. Prepare large baking sheet by lining with parchment, baking mat, or with butter and flour.

2. In a bowl whisk together flour, cocoa powder, baking soda, and salt.

(Don’t miss step 3 or dough will be crumbly)

3. In a separate bowl, using an electric mixer beat together butter and granulated sugar until light and fluffy. Add eggs and beat until combined well. Add vanilla extract and combine well.

4. Stir in flour mixture to form a stiff dough. Mix in chocolate chips until combined. ( I kneed the dough like bread since I don’t have a stand mixer)

5. Divide dough in half. Flour hands and form dough into two slightly flattened logs on prepared baking sheets, each approximately 12 inches long, 4-6 inches wide and about and inch thick. Sprinkle with confectioners' sugar.

6. Bake 30-35 minutes, or until slightly firm to the touch. Cool on baking sheet 5 minutes. (I never wait and usually cut directly on the pan then use something to space them out a bit 🤷🏻‍♀️)

7. Transfer to cutting board and cut diagonally into ¾-inch slices. Arrange biscotti, on a baking sheet and bake for about 10 minutes, or until crisp. Cool on a rack.
