It’s perfect for those busy weeknights or when I just want something comforting without a lot of fuss. I mean, who has time for complicated recipes every day?
What makes this vegetarian quesadilla a total winner for me is how customizable it is, but honestly, the classic combination of peppers and onions just hits differently. I usually grab a mix of colorful bell peppers – red, yellow, green – and one medium onion. They sautée beautifully and add so much flavor and a lovely crunch. Sometimes I’ll even throw in some fresh spinach right at the end, or a handful of corn kernels if I have them. The key is to chop your veggies into small, uniform pieces so they cook quickly and evenly in the pan. I find that about 1/2-inch dice works perfectly.
