... Read moreOh my goodness, the best time of the year is finally here – BBQ season! There’s just something about that smoky aroma drifting through the air that instantly puts a smile on my face. Kicking off the season is always a special event for me, and this year was no exception. I swear, the anticipation builds all winter long! Before I even thought about what to cook, the first order of business was getting the grill ready. It had been hibernating all winter, so a good scrub-down was essential. I checked my propane tank (always a good idea to have a backup, trust me on this!) and made sure all my grilling tools were clean and ready to go. There’s nothing worse than being mid-cook and realizing you’re missing tongs! For my inaugural BBQ feast, I wanted classic comfort food that everyone loves. And what says "summer" more than a perfectly grilled cheeseburger and a juicy hot dog? I prepped some thick, seasoned beef patties, making sure to press a little dimple in the center to keep them from puffing up. Once they were sizzling on the grates, I patiently waited for that beautiful char. The best part? Adding a slice of cheddar right at the end so it gets perfectly melted and gooey over the patty. For the hot dogs, I like to score them lightly before grilling; it helps them cook evenly and gets those delicious crispy edges. A good bun is non-negotiable, and I piled mine high with mustard and relish, just how I like it! But a BBQ isn't complete without some fantastic sides. This year, I decided to go with grilled asparagus. It’s so simple yet incredibly flavorful. I just tossed the spears with a little olive oil, salt, and pepper, and then they went straight onto the grill for a few minutes until they were tender-crisp. They really cut through the richness of the burgers and hot dogs, making the whole meal feel balanced and fresh. I also quickly whipped up a simple potato salad and grilled some corn on the cob – because why not go all out for the first one? My top tip for anyone planning their first BBQ of the season? Don't overthink it! Keep it simple, focus on good quality ingredients, and most importantly, enjoy the process and the company. There’s no need for fancy marinades or elaborate dishes if you’re just starting out. The joy of a BBQ is in the relaxed atmosphere and sharing good food with loved ones. It felt so good to fire up the grill again. This meal, served on my favorite red and white checkered paper plate, truly felt like a celebration of warmer days ahead.
