But when you find that truly pure extract, the difference is night and day. For me, the biggest benefit has been the taste. Without erythritol, the monk fruit's natural sweetness shines through without any odd aftertastes. It's just clean, pure sweetness that mimics sugar beautifully, but without the calories or blood sugar spikes. This has been perfect for maintaining my low-carb lifestyle without feeling deprived of sweet treats.
