Ingredients
* 8 ounces pasta such as penne,(250g)
* 3 medium garlic cloves
* 1 tbsp olive oil
* 1/2 red bell pepper, sliced
* 1/2 green bell pepper, sliced
* 1/2 yellow bell pepper, sliced
* 1/2 cup green onions, diced, (40g)
* 2 tbsp jerk seasoning
* 1 tsp paprika
* 1/2 tsp salt
* 1/2 tsp onion powder
* 1 1/2 cups vegan heavy cream,(350ml)
* 1/4-1/2 cup pasta water, (60ml)
* 1 cup frozen vegan chicken, (240g)
* 1/2 cup vegan parmesan, (55g)
1️⃣ Boil the pasta in salted water until it’s al dente (10-12 minutes). Reserve 1/2 cup of pasta water before draining it.
2️⃣ Heat a large pan over medium-high heat. Add the oil and once heated, add the peppers. Sauté them for 3-4 minutes, just till they start to soften.
3️⃣ Add the garlic and green onions to the pan. Cook them for 1-2 minutes until they become fragrant.
4️⃣ Stir in the vegan heavy cream and seasoning. Lower the heat to medium and stir occasionally as the sauce cooks and thickens for about 5 minutes.
5️⃣ Add ¼ cup of the pasta water to the sauce and whisk it for a few more minutes until it thickens again. Stir in the vegan parmesan till it has melted.
6️⃣ Stir the frozen vegan chicken throughout the sauce. Let it cook for 2-3 more minutes to heat the chicken. Turn the heat off and fold in the pasta until it’s fully coated. Enjoy with vegan parmesan and green onions on top!
Okay, so my 20-minute Vegan Rasta Pasta recipe is already a hit, but I know many of you are always looking for ways to customize or adapt recipes to your pantry or preferences! That's what makes cooking so fun, right? This vegan Rasta Pasta is super versatile, and I've got some extra tips to make it even more perfect for you. You can make it creamy, spicy, and utterly satisfying, even with a few tweaks. First, let's talk about creaminess. My recipe uses vegan heavy cream, which is delicious, but what if you're out, or want something a bit lighter, or are looking for rasta pasta without heavy cream? No problem! You can achieve a lovely creamy texture using soaked cashews blended with a little water until smooth – just add it when the recipe calls for cream. Another trick is using light coconut milk for a slightly different, but equally delightful, Caribbean twist. And don't forget the power of pasta water! Whipping in extra starchy pasta water with a tablespoon or two of nutritional yeast can create a surprisingly rich and cheesy consistency without any added cream at all. I've done this before when I was trying to lighten things up, and it worked beautifully! Now, I know some of you might be huge fans of jerk shrimp Rasta Pasta, and as a vegan, I've had to get creative! While my recipe is for a plant-based version with vegan chicken, you absolutely can adapt this for a 'shrimp' experience. My favorite trick is using king oyster mushrooms – slice them into rounds or planks, score them, and marinate them in jerk seasoning before pan-frying or baking until they get a lovely, slightly chewy texture. Or, if you can find them, there are some fantastic plant-based shrimp alternatives on the market now that would be amazing tossed in the sauce at the end. Just treat them similarly to how you'd treat the vegan chicken, ensuring they're heated through and coated in that amazing jerk flavor. What if you're craving this dish but realize you're all out of jerk seasoning? Don't despair! Making your own blend for rasta pasta without jerk seasoning is easier than you think. A basic blend typically includes allspice, dried thyme, paprika, garlic powder, onion powder, a pinch of cayenne or Scotch bonnet powder for heat (if you dare!), and some brown sugar for balance. Mix these spices together, and you've got a fantastic substitute that brings all those authentic Jamaican flavors to your kitchen. I've definitely whipped up my own blend in a pinch, and it was just as vibrant! And for those who specifically search for Jamaican jerk chicken pasta, my recipe's vegan chicken really shines here. Instead of traditional chicken, I use frozen vegan chicken pieces, which are super convenient. To elevate them, I like to toss them with a little extra jerk seasoning and a tiny bit of oil before adding them to the pan. This way, they get a nice crust and absorb even more of that iconic flavor. You can use various types of plant-based chicken, from soy-based strips to seitan or even marinated, pan-fried tofu cubes. The key is to ensure they're well-seasoned and cooked to your preferred texture before folding them into the creamy sauce. It gives you that hearty, satisfying bite without any meat. So, whether you're adjusting for what's in your pantry, trying to make it lighter, or experimenting with different protein sources, this Vegan Rasta Pasta recipe is incredibly forgiving and delicious. Don't be afraid to play around with the bell peppers, add some spinach, or even a sprinkle of fresh cilantro at the end. It's all about making it your own and enjoying a truly flavorful, quick meal!
