Ingredients:
Cake:
- 2 ½ cups (310 g) all-purpose flour
- 2 ½ teaspoons baking powder
- ½ teaspoon salt
- 1 cup (225 g) butter, at room temperature
- 1 ¾ cups (350 g) sugar
- 4 large eggs (room temperature)
- 2 teaspoons vanilla extract
- 1 cup (250 ml) whole milk
Crème brûlée cream:
- 2 cups (500 ml) heavy cream
- 1 vanilla bean or 2 teaspoons vanilla extract
- 6 large egg yolks
- ½ cup (100 g) sugar
- Pinch of salt
Caramel glaze:
- 1 cup (200 g) sugar
- 6 tablespoons (85 g) butter
- ½ cup (120 ml) heavy cream
- Pinch of salt
Decoration and assembly:
- 1 cup (120 g) pecans, toasted and chopped
- ½ cup (100 g) sugar (for brûlée topping)
Directions:
1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
2. In a medium bowl, whisk together flour, baking powder, and salt.
3. In a large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
4. Alternately add the flour mixture and milk to the butter mixture, beginning and ending with flour. Mix until just combined.
5. Divide batter evenly between prepared pans and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Cool in pans for 10 minutes, then transfer to wire racks to cool completely.
