VEGAN JAMBALAYA

🛒 Ingredients:

• 1 small red onion, diced

• 1 small orange or yellow bell pepper, diced

• 2–3 garlic cloves, minced

• 1–2 tomatoes, diced (save some for garnish)

• 1 bunch of collard greens (or kale), chopped

• 1 can kidney beans, drained & rinsed

• 2 bags brown rice (boil-in-bag or ~2 cups cooked)

• Green onion (for garnish)

• 1 tsp smoked paprika

• 1 tsp chili powder

• 1 tsp garlic powder

• 1 tsp minced onion (dried)

• 1 tsp black pepper

• 1 tsp cayenne (adjust to spice level)

• 1 tsp chili flakes

• 1 tsp oregano

• 1 tsp thyme

• 1 tsp kosher salt

👩🏾‍🍳Put it together

1. Cook rice according to package directions; set aside.

2. Sauté onion, bell pepper, and garlic in a large pan until soft.

3. Add all spices and toast for 1–2 minutes.

4. Stir in beans, greens, and tomatoes. Cook until greens wilt.

5. Mix in cooked rice and combine well. Let it cook for 5 more minutes.

6. Garnish with diced tomato and green onion. Serve hot.
