Chicken Curry Soup

This recipe is chef’s kiss!

I made enough to feed 10. Cut it half for 2-4people.

2.5 pounds of chicken thigh

5 carrots, 5 celery diced

1 whole yellow or white onion diced

4 garlic gloves minced

8 teaspoons of curry

2 teaspoons of pepper

2 table spoons of chicken bouillon & 10 cups of water OR Use 10 cups of chicken or vegetable broth

1/2 cup of lentils red or green

4 potato’s diced

3/4 cup of coconut milk (optional) creamer taste

Sauté onion, carrots & celery 5 minutes. After that add garlic and sauté 2 more minutes.

Add bouillon & water OR Broth of your choice. Add all spices. Add lentils & chicken and cook for 20-25 minutes.

Here is where I taste the broth to see if I need more salt or any other seasoning. Add the potato’s & cook till they are done. 15-20 mins longer.

Serve by it self or over white basmati or jasmine rice.

Garnish with fresh squeezed lemon & parsley.
