🔥Ingredients
Beef and aromatics
∙ 2 lb bone-in beef shank, cut into large chunks
∙ 1 lb beef bones, optional, for extra richness
∙ 2 tbsp vegetable oil
∙ 1 knob ginger, sliced
∙ 6 garlic cloves, smashed
∙ 6 scallions, cut into 2 inch pieces
∙ 1 yellow onion, cut into wedges
Broth base
∙ 2 tomatoes, quartered
∙ 1/2 cup soy sauce
∙ 2 tbsp dark soy sauce
∙ 1/2 cup shaoxing wine
∙ 2 tbsp rock sugar or brown sugar
∙ 3 star anise
∙ 1 cinnamon stick
∙ 3 whole cloves
∙ 2 bay leaves
∙ 8 cups water or beef stock, plus more as needed
Vegetables and noodles
∙ 2 carrots, peeled and cut into large chunks
∙ 1 daikon radish, peeled and cut into large chunks
∙ 1 lb fresh wheat noodles or dried noodles
❤️Instructions
1. Blanch the beef. Bring a large pot of water to a boil. Add the beef shank and beef bones, boil 3 to 5 minutes to remove impurities. Drain and rinse under cold water. Set aside.
2. Sauté aromatics. Heat vegetable oil in a large heavy pot or Dutch oven over medium heat. Add ginger, garlic, scallions, and onion. Stir fry 2 to 3 minutes until fragrant.
3. Build the base. Add tomatoes, cook 2 minutes, pressing gently to release juices.
4. Deglaze and season. Pour in shaoxing wine to deglaze, scraping up browned bits. Add soy sauce, dark soy sauce, and sugar.
5. Add spices and beef. Add star anise, cinnamon stick, cloves, and bay leaves. Return blanched beef and bones to the pot.
6. Simmer the broth. Pour in water or stock, enough to fully submerge the beef. Bring to a boil, reduce heat to low, cover partially, and simmer gently 1.5 hours, skimming foam occasionally.
7. Add vegetables. Add carrots and daikon. Continue simmering, covered, until beef is fork tender and vegetables are soft, 45 minutes to 1 hour longer. Add more water or stock if the level drops too low.
8. Season to taste. Adjust seasoning with more soy sauce or sugar as needed. Remove and discard star anise, cinnamon stick, cloves, and bay leaves if desired.
9. Cook the noodles. Bring a separate pot of water to a boil. Cook noodles according to package directions until just done. Drain and divide among serving bowls.
10. Assemble bowls. Ladle hot broth, beef, carrots, and daikon over noodles in each bowl. Top with scallions!
