🥐 Lemon Custard Croissants with Lemon Glaze🍋
Ingredients
For the croissants:🥐
• 4 large croissants (store-bought or homemade).
🍋For the lemon custard filling🍋
• 1 cup whole milk
• 2 egg yolks
• 1/4 cup granulated sugar
• 2 tbsp cornstarch
• 2 tbsp butter
• 1 tsp vanilla extract
• 1–2 tbsp fresh lemon juice
• 1 tsp lemon zest
For the lemon glaze:
• 1 cup powdered sugar
• 2–3 tbsp fresh lemon juice
• 1/2 tsp lemon zest
• 1–2 tbsp heavy cream
Instructions
1. Make the lemon custard
• In a saucepan, whisk together sugar + cornstarch
• Add egg yolks and milk, whisk until smooth
• Cook over medium heat, stirring constantly until thickened
• Remove from heat, then stir in butter, vanilla, lemon juice, and zest
• Let it cool completely (it will thicken more as it cools)
2. Prepare the croissants
• Slice each croissant open (like a sandwich, but don’t cut all the way through)
• Fill generously with lemon custard
3. Make the glaze
• In a bowl, mix powdered sugar with lemon juice
• Add zest and a little cream if you want it smoother and glossy
• Adjust thickness:
• Too thick → add more lemon juice
• Too thin → add more powdered sugar
4. Assemble & finish
• Drizzle the lemon glaze generously over the top
• Let some drip down the sides for that “bakery look”
• sprinkle extra lemon zest and powdered sugar on top
